Peanut Butter Cake

This is one of my sister's best cakes. It is oh, so, yummy!

2 C. Flour
1 t. Soda
2 C. Sugar
1/2 t. Salt

1/2 c. oil
11/2 sticks margarine
1/2 c. peanut butter
1 c. water

2 eggs, beaten
1 t. vanilla
1/2 c. butter milk (1/2 T. lemon juice add milk to 1/2 c. and let sit for a few minutes)

Icing:
1/2 c. evaporated milk
1 c. sugar
1 T. margarine

1/2 c. PB
1/2 c. mini marshmallows
1 t. vanilla

Mix together dry ingredients in a bowl. Set aside. In a saucepan bring oil, marg. PB, and water to a boil. Pour over dry ingredients and mix. Add beaten eggs, vanilla, and buttermilk, blending well. Pour batter into a greased and floured 11x15x1 sheetcake pan. Bake 15-18 min. @ 350. While the cake is baking, combine evaporated milk, sugar, and marg. in a saucepan. Bring to a boil, cook for 2 minutes. Remove from heat and add PB and marshmallows. Stir until melted. Stir in vanilla. Pour over warm cake and spread to cover. ENJOY!!
