Easy Quesadillas

The options with this recipe are pretty much endless! Here are a couple of things I have done with it:

Pizza quesadillas

Butter
flour tortillas
mozzarella cheese, grated
oregano
Parmesan cheese
pepperoni
Pizza sauce (or spaghetti sauce) for dipping

Butter a tortilla, place butter side down into a hot fry pan. Sprinkle with mozzarella, add a few pepperoni, sprinkle with oregano and parmesan. Top with another buttered tortilla, butter side up this time. Flip over - cook until browned (about 1 minute). Cut into wedges, serve with dipping sauce.

Chicken quesadillas
I totally made this one up, but it turned out SO good!

Butter
flour tortillas
1 chicken breast
Cheddar and/or mozzarella cheese, grated
3 TBSP Italian dressing
1tsp soy sauce
(opt) ranch for dipping

One chicken breast makes two quesadillas

Cut chicken breast into small pieces. Spray pan and cook chicken breast for a few minutes. Add soy sauce and Italian dressing. Cook thoroughly. Allow sauce to boil and thicken.

Butter a tortilla, place butter side down into another hot fry pan. Sprinkle lightly with cheese. Add half of cooked chicken pieces. Cover with more cheese. Top with another buttered tortilla, butter side up this time. Flip over - cook until browned (about 1 minute). Cut into wedges, serve with dipping sauce.

You could do so much with this recipe - ham and cheese, turkey, maybe even peanut butter and jelly! :) I think I am gong to start sticking some veggies in there some where too.
