Tasty Tuesday: Peanut Butter No-Bakes

This is one of my favorite cookie recipes and it's super-easy! A great little touch of sweetness for when your hubby arrives home from work or after the kiddos are in bed and you want to have something snacky with coffee...or, of course, a little sweet-nothin' for your kids.

Peanut Butter No-Bakes

1/2 cup milk
1 stick butter/margarine
1 tsp vanilla
2 cups brown sugar
1/2 cup peanut butter
3 cups oatmeal

**Over medium heat -- melt butter & add milk -- then add brown sugar. Bring to a full boil and let cook for 1 minute. Make sure you do not "under cook" the mixture to make sure the sugar has completely dissolved. Remove from heat and add vanilla and peanut butter, mix till smooth then add oatmeal, mix well and drop on wax paper.

Theses are so YUM YUM! I like them way better than the chocolate no-bakes. They are quick as a wink and if you put them in the fridge they will harden faster.
